• 8 Tablespoons (1 stick) butter, melted and cooled
  • 3/4 cup granulated sugar
  • 1/4 cup dark brown sugar
  • 2 large eggs
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon ground cloves
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 pound carrots, grated on small holes of a box grater

Heat oven to 350º
Oil muffin pan or use paper liners.
Whisk butter, sugars and eggs in a large bowl.
Mix in remaining ingredients until combined.
Divide batter evenly into muffin pan.
Bake 15 to 18 minutes
